Sushi (according to Andrea)


So my very dear friend Andrea launched her business this past Saturday in NYC.  The party was absolutely fabulous and so was her food demo.  She showed all of her guests how to make sushi from start to finish.  Of course this got me in a sushi mood...hence this blog entry.  Thank you Andrea for your inspiration!!!

There is an infinite amount of items you can put into a sushi roll: grain - veggies - fruit - meat - sauces...really it's endless!  I decided to keep my rolls on the simple side - here is what I used:

Sushi Ingredients:


Toasted nori
Quinoa
Umeboshi paste
Wasabi
Sesame ginger sauce (see recipe below)
Daikon radish
Carrots
Cucumber
Red and orange bell peppers
Fresh basil
Sprouts
Avocado
Sesame seeds

Carefully place each ingredient on top of the nori sheet – roll it on a sushi mat – slice on a bias and enjoy! (see pictures below for step-by-step instruction)


Sesame Ginger Sauce Ingredients:

Sunflower seeds (soaked over night and drained)
Caramelized onions
Umeboshi paste
Tamari
Garlic
Ginger
Apple cider vinegar
Toasted sesame oil
Fresh lemon juice
Fresh black pepper

Put all in ingredients in a blender (or Vitamix) and blend until the desired consistency is reached.

Pickled ginger, a little wasabi and sesame ginger sauce is always a nice addition on the plate with your sushi J

Quinoa first...



On top of the quinoa I put the wasabi, umeboshi paste, sesame ginger sauce, basil and daikon - everything is carefully placed down the middle of the quinoa so it looks pretty when you cut it.


Next I added the red and orange peppers, carrots and cucumber.


Sprouts...



Top it all off with avocado...YUM!!!

Now for the tricky part - roll the sushi carefully on the mat - wet the end of the nori with a little bit of water - and seal the deal!



The end result is beautiful and absolutely delicious!
